Spinach Dip

Spinach Dip

This is always a popular appetizer and is good with cut up vegetables or baguettes (fresh or toasted). This recipe is almost identical to the recipe on the Knorr-Swiss soup box, but the ratio seems better. For an elegant presentation, make a bread bowl by neatly cutting off the top of a round loaf of bread and scooping out the bread inside. Fill with spinach dip and replace the top of the bread for a lid.


Ingredients

2ea. 10 oz packages frozen, chopped spinach
2 cups sour cream
2 cups mayonaise
2 boxes Knorr-Swiss Vegetable Soup and Recipe Mix
2 cans water chestnuts, chopped
1 bunch of green onions, chopped


Preparation:

Prepare the spinach: put in microwave safe bowl and cover with saran wrap and cook for 2-3 minutes, mix, and cook for 2-3 more minutes or until spinach is fully defrosted and mostly warm. Let it sit for 10 minutes to cool.
Squeeze all the excess water out of the spinach or the dip will be watery.

Mix all ingredients together well and refridgerate for several hours or overnight for best flavor.
